Mason Jar Meals

Mason jar meals are not just for the hip and Pinterest-obsessed. These portable meals force you to get mindful about portion sizes and are definitely Instagram-worthy. Whip up one of these healthy on-the-go treats with just a bit of prep work.

 

Hot Tip: Allow cooked items to cool before placing in jars to avoid wilting and general mushiness.

 

Breakfast: Apple Crunch Parfait

5 oz. of Greek yogurt.

1 apple

¼ cup of raisins

¼ cup of the granola of your choice

1/8 cup of chocolate chips

A drizzle of honey

1.) Spoon in Greek yogurt to the bottom of the Mason jar.

2.) Dice one apple and layer the pieces in.

3.) Top with raisins.

4.) Add in your granola.

5.) Sprinkle in chocolate chips.

 

Lunch: Shrimp Couscous

¾ cup of cooked couscous

1 Portobello mushroom

1 tbsp. olive oil

¼ cup of cooked shrimp

¼ cup of cooked corn

1.) Chop up Portobello mushroom and sauté in olive oil.

2.) Place cooked couscous on the bottom of Mason jar.

3.) Top couscous with half of sautéed Portobello mushrooms.

4.) Layer shrimp on top of mushrooms

5.) Follow with layer of corn.

6.) Top off with remaining sautéed mushrooms.

 

Dinner: Chicken Pesto Pasta

1 cup of cooked pasta

1 tbsp. of pesto paste

½ of a chicken breast

¼ cup peas

2 sun-dried tomatoes

Sprinkle of feta

1.) Combine cooked pasta and pesto. Place in bottom of Mason jar.

2.) Layer chicken on top of pasta.

3.) Top pasta with peas.

4.) Chop up sun-dried tomatoes. Add layer to Mason jar.

5.) Sprinkle feta on top.

 

Eat up!
